Sear-Roasted Halibut with Tomato & Capers

Yields4 Servings

In medium bowl mix together:
 1 pt cherry or grape tomatoes, halved
 2 tbsp capers, rinsed
 1 ½ tbsp chopped fresh oregano
 1 ½ tsp balsamic vinegar
 ½ tsp sea salt
 ¼ tsp pepper
 2 cloves minced garlic
On a flat plate or dish, mix together:
  cup all-purpose or wheat free flour
 ¾ tsp sea salt
 ¼ tsp pepper

Heat oven to 450

Dredge 4 halibut steaks in the flour mixture, shake off excess flour.

Heat 2 TBS olive oil in 12-inch oven proof skillet over medium-high heat until simmering.

Add fish to skillet, cook without touching until it browns, about 3 minutes.

Flip fish, sprinkle tomato mixture around it, brown for about 30 seconds.

Transfer skillet to oven. Roast until fish is firm to the touch, about 3-6 minutes.

Let fish rest for a couple of minutes and then serve with tomato mixture spooned over it. OPTION-serve on a bed of wilted spinach.
